dc.description.abstractDie Arbeit zielte auf die Entwicklung eines Verfahrens zur Gewin- nung von Rapsöl und Proteinprodukten in einem simultanen Extrakt- ionsschritt, wobei organische Lösemittel und die thermische Denaturierung der Speicherproteine vermieden werden sollten. Im ersten Teil wurden für Rapskörner morphologische Grundlagen sowie die Wechselwirkung der Inhaltsstoffe auf Basis chemischer und physikalischer Eigenschaften von Rapsöl und den Protein- fraktionen formuliert. Die simultane Öl- und Proteingewinnung wurde in die Teilprozesse: thermische Konditionierung von geschäl- ten Rapskörner; mechanische Zerkleinerung und Nasszellaufschluss, spontane Extraktion von Öl und Protein gegliedert. Für die Teilschritte wurden reaktionstechnische Darstellung formuliert und in einem dynamischen Massenmodell bilanziert. Im zweiten Teil der Arbeit wurden die verfahrenstechnischen Funk- tionsmodelle für die Teilschritte zur simultanen Öl- und Protein- gewinnung experimentell verifiziert. Es wurde die Auswirkung der mechanischen Leistungsdissipation beim Zellaufschluss im Bereich 10 bis 1.000 W/kg (UT-Verfahren) und 100 bis 200.000 W/kg (HDH- Verfahren) und das Extraktionsverhalten untersucht. Als günstig erwies sich das UT-Verfahren mit integrierter Nasssiebung größer 40 Mikrometer und Rückführung der groben Feststoffe. Das UT- Verfahren zeigte eine hohe Selektivität für die Extraktion von Öl und geringe Wechselwirkungen zwischen Öl und ölfreier Trockensub- stanz. Als innovative Proteinfraktion konnte das Membranprotein Oleosin mittels des UT-Verfahrens aus der O/W-Emulsion im tech- nischen Prozess gewonnen werden. Zur Absicherung der Protein- qualität wurde die Kinetik der thermischen Denaturierung der Myrosinase und der Speicherproteine in Rapskörner ermittelt. Es wurde in dem lösemittelfreien Verfahren eine Ölausbeute von 72 % erreicht. Dieser Wert stellt einen deutlichen Fortschritt dar, allerdings beträgt die Ölausbeute durch mechanisches Pressen der Rapskörner 85 %. Im Gegensatz zu dem Expeller aus dem bekannten Fertig-Pressverfahren bietet das entwickelte Verfahren neben der Oleosingewinnung die Option der Gewinnung von lös- lichen und hellen Proteinprodukten.de
dc.description.abstractThe objective of the work was to develop a process for recover- ing rapeseed oil and protein products in a simultaneous extraction step. It was further intended to avoid the use of organic solvents and thermal denaturing of the storage proteins. In the first part of the thesis, the morphology of rapeseed is discussed and the interactions of the constituents are assessed on the basis of the chemical and physical properties of the rapeseed oil and the protein fractions. The simultaneous re- covery of oil and protein has been split into the following sub- processes: chemical conditioning of the hulled rapeseed; mech- anical crushing and wet cell treatment; spontaneous extraction of the oil and protein. For each of the steps, reaction schemes were formulated and these were balanced in a dynamic mass model. The second part of the work experimentally verifies the process engineering functional models for the sub-processes involved in the simultaneous recovery of oil and protein. The effect of mechanical power dissipation during the cell treatment in the range from 10 to 1,000 W/kg (UT process) and from 100 to 200,000 W/kg (HDH process) was studied, as was the extraction behaviour. The UT-process with integrated wet-sieving of particles greater than 40 microns and recycling of the coarsest solids gave favourable results. The UT-process is shown to have high selectivity for the extraction of oil and there are only minor interactions between the oil and oil-free dried matter. An innovative protein, the membrane protein oleosin, was recovered from the O/W emulsion in the pilot-plant scale UT-process. In order to assess the quality of the protein, the kinetics of thermal denaturing of the myrosinase and the storage proteins in the rapeseed were determined. An oil yield of 72% was achieved in the solvent-free process. This figure represents considerable progress, although the oil yield from mechanically pressing the rapeseed is 85%. In contrast to the expeller from the well-known final-press technique, the process which has been developed here offers the option of recovering soluble and light-coloured protein products in addition to the oleosin.en
